For those not with a New Year’s resolution of no sugary treats I have the perfect afternoon tea snack. I found it on the Sainsburys website just before Christmas when I was looking for inspiration on how to use up the lemons I had left after making Limoncello.

It is deliciously moist but sturdy and not too tart which I find some lemon cakes can be.

Ingredients

  • 225g soft butter
  • 4 large eggs
  • 55g ground almonds
  • 397g condensed milk
  • grated zest & juice of 1 lemon
  • 1 teaspoon baking powder
  • 1 tablespoon poppy seeds

for the syrup

  • Juice from 3 large lemons
  • 100g icing sugar

for the icing

  • 2 tablespoons lemon juice
  • 100g icing sugar
  1. Preheat the oven to 180ΒΊC/350ΒΊF/Gas mark 4
  2. Whisk all the cake ingredients together with an electric mixer until smooth and pale
  3. Pour into a deep lined cake tin and bake for 55-65 minutes. Test if the cake is cooked with a skewer. If it comes out clean the cake is cooked. Leave the cake in the tin.
  4. For the syrup, warm the lemon juice and add the icing sugar. Let the icing sugar dissolve. Make holes with a skewer into the top of the warm cake and spoon the syrup over letting it seep through the cake. Cool the cake in the tin
  5. For the icing, slowly add the lemon juice to the icing sugar and mix until smooth. Remove the cooled cake from the tin and drizzle over the icing.
  6. Eat!
