I adore Limoncello. My problem is it is sooo good I usually end up having too many and regret it afterwards, that is why it has been such a long time sincec I last had one.

Use zest from 6 unwaxed lemons with 70cl of vodka. Leave for a week. Shake everyday. Dissolve 250g of caster sugar with 300ml on a medium heat. Leave to cool. Add to vodka and then strain. Haven’t finished it so can’t vouch for it yet. š
I have to say after a night in the freezer this was the best limoncello I have ever had! What a wonderful gift!
