We love this meal here, especially me. An all in one dinner equals one dish to wash up and nothing else! This herby one pot chicken, is absolutely delicious, it is very tasty and the children always love me serving this up…and that makes a change to get a hands up from everyone!

All measurements are approximate because I have a big family, two teenage boys eat the equivalent meals of four grown men so I throw in as much as possible. I cook this in huge aga roasting tin. I also vary the vegetables depending on what I have in the fridge. Butternut squash is good as would be any number of vegetables that like being roasted such as courgettes, leeks, aubergine.

If you were cooking this meal for four adults I would suggest the following so adjust according to numbers and appetites:


Herby One Pot Chicken

Prep time:

Serves: 4

Ingredients
  • 500g baby new potatoes
  • 300g chantenay carrots or carrots peeled and chopped into large chunks
  • fresh parsley
  • fresh thyme
  • whole bulb of garlic separated
  • 8 chicken thighs or 4 breasts
  • 1 lemon
  • 200ml chicken stock or 100ml white wine & 100ml chicken stock
Instructions
  1. Preheat oven to 180ΒΊC/gas mark 6
  2. Halve the potatoes and toss in the roasting tin with 1 tbsp of olive oil
  3. Add the carrots, chopped parsley, sprigs of thyme and the garlic cloves to the tin
  4. Place the chicken on top of the potatoes and carrots
  5. Slice the lemon and add to the tin
  6. Drizzle olive oil over the contents of the tin and then add the stock and wine, if using
  7. Roast for approximately 45 minutes or until the potatoes and chicken are cooked
