If you still have the autumn bumper crop of apples to use up, why not replace the traditional jam filling in your Victoria Sandwich with apple. Chop two apples into small cubes then cook gently with caster sugar, to taste, until the apple is cooked slightly but still chunky. Leave to cool completely. Whip 150ml of double cream and use to cover one half of the cake. Pile the apple ‘jam’ on top and place the other cake half on top. Finish off with a sprinkling of icing sugar and eat!

I always use Nigella Lawson’s recipe for a Victoria Sandwich from her book ‘How to be a Domestic Goddess’  which replaces a small amount of the self raising flour for cornflour and I make it in a food processor for speed.
