Still looking for Halloween ideas? Look no further, these are tasty yummy biscuits and they are very easy to make….Big C made these cookies for the Children’s entry of the Autumn bake off over at English Mum’s using a selection of Silverspoon decorating bits that we were sent to try out.
- 175g soft unsalted butter
- 400g plain flour
- 1 teaspoon baking powder
- 200g caster sugar
- 1 teaspoon salt ( I use less than this)
- 2 large eggs
- 1 teaspoon vanilla extract
- 300g icing sugar and food colouring
- Preheat the oven to 180ºC/ gas mark 4
- Cream the butter & sugar until pale and mouse like
- Beat in the eggs & vanilla
- In a separate bowl combine the flour,baking powder & salt
- Add dry ingredients to the butter & eggs, mix gently.
- If the mixture is too sticky then add more flour sparingly.
- Halve the dough,make into fat discs,wrap each half into clingfilm and rest in fridge for at least 1 hour.
- Remove one disc and place onto a floured surface.Roll out to a thickness of 1/2cm. Cut with the cookie cutters & place onto greased or lined baking sheet leaving a small space between each one.
- Bake for 8-12 minutes until golden brown on the edges.
- Leave to cool.
- Decorate with icing
