Why on earth would I possibly think that I can avoid edible goodies in the summer holidays? The weather has been pretty rubbish this week so we have been stuck indoors a bit more than the last couple……maybe that’s why my mind is constantly thinking of food and what I can make next. Forget that I have a wedding to attend to and a dress to fit into in a couple of weeks……

I have discovered I am a selfish baker…..I like to indulge when no one is looking, rather than the children fighting over who is going to put the sugar in, then the flour, mix it, pour it, eat the remains…arghhh…..

Anyway, I got caught halfway through this pleasurable moment…..by Little M who insisted on ‘helping’. Who plunged the cookie cutter into the rolled dough, rolled with an improvised rolling pin, every time I turned away.

Shortbread Hearts ( or whatever shape you desire)

Ingredients

125g butter

55g caster sugar

180g plain flour

  1. Heat the oven to 190ΒΊC/ gas mark 5
  2. Beat the butter and sugar until creamy
  3. Stir in the flour. You may find you need to use the back of a spoon to get the mixture to come together and then your hands to form a dough.
  4. Roll out the dough to about 1cm thickness
  5. Using a cookie cutter cut out the cookies and place onto a baking sheet.
  6. Chill in the fridge for 20 minutes
  7. Bake for 15-20 minutes until a pale golden colour.
  8. Remove to a wire rack and sprinkle with granulated sugar
  9. Allow to cool
  10. Enjoy…….would be lovely with strawberries and cream.

  4. I remember the “helping” I used to get from Man-Child – it usually ended with me cleaning a huge mess, so yes, I too, am a selfish-baker. But the memories. Now, his idea of “helping” is to just lick the batter from the bowl and indulge in the end product. These look very yummy!!
