
My seventeen year old son E was diagnosed with coeliac disease seven years ago, although in hindsight he has probably had it since a toddler. He has never moaned or complained that he can’t eat exactly the same as everyone else. At home it
isn’t too much of a problem anyway because we tend, on the whole, to eat the same. I do feel sad though that going out with his friends and grabbing a burger, as is an obligatory teen privilege, is not something he can do. Thus, KFC, Burger King, McDonald’s and Subway are all off the menu. I was sent a huge selection of gourmet spice blends from Life of Spice and used one called
Memphis Belle, a gourmet rub made up of ingredients including; Paprika, Mustard, Celery Seeds, Onion, Garlic and Chipotle, to make E gluten free ‘Southern Fried’ chicken. The Gourmet Rubs, Herbs and Spices will definitely change the way you cook, I hate plain meat so these are just perfect…mix them with yogurt and rub over meat, rub over dry or mix with a little oil, add to salad dressings, use ones such as Herbes De Provence in a meat pasty mixture…mmmm delicious. These are just a few ideas that I have tried and tested but more to follow. However back to the recipe, adding a couple of tablespoons of Memphis Belle to your gluten free crumb mix gives a lovely “southern fried’ taste, which my son says reminds him of KFC. Brilliant news.
- 100g Orgran all purpose rice crumbs
- 2 tbsp Life of Spice Memphis Belle Gourmet Rub
- 1 egg beaten
- 6 Chicken Drumsticks
- Spray oil
- Preheat the oven to 180ºC
- Mix the rice crumbs and Life of Spice Memphis Belle Gourmet rub and place in a shallow bowl
- Dip a chicken drumstick into the egg and then coat completely with the crumb mixture
- Put on a foil covered baking tray*
- Repeat with the other drumsticks
- Give the drumsticks a little spritz of oil for a more authentic taste.
- Bake in the oven for 30 minutes or until the juices run clear and the drumsticks are completely cooked*
- *Or using a Tefal Actifry with Snacking accessory cook the drumsticks for 30 mins, again until completely cooked. Cooking in the actifry makes them extra crispy.
I’m still learning about gluten free food so I didn’t know it’s still possible to make this kind of chicken meal without gluten. Thanks for sharing this recipe!
