We love enchiladas, in fact we love any big comfort food. I’m afraid my children have inherited my passion for it. However it is bloomin’ hard finding gluten free wraps to make them with. I have bought them before, by the dozen because of the postage costs but they tend not to roll easily without cracking and they are always really tiny. After a plea on Twitter for a recipe that works, still nothing and the ones I have made before are too crispy and not at all suitable for enchiladas. However after a little searching on the internet, and of course I didn’t have the correct ingredients, I decided to play around and go for simplicity…and it works. Eureka! This is so simple I don’t know why I haven’t seen a recipe like this before…it is easy, tasty ( I know because I ate them too) and even perfect for lunch wraps.
Ingredients
- 275 g Doves gluten free plain flour
- 2 tsp sugar
- 1 tsp salt
- 1 1/2 tsp xanthan gum
- 250ml warm water
- The easiest way to do this is to throw all the ingredients into a food processor and process. Literally seconds later you will have a ball of dough. If you don’t have a processor beat the ingredients until you have a smooth dough.
- Divide the dough into 8 balls
- Dust a clean surface, or baking paper, with GF flour and roll out 1 of the balls until a very thin circle, probably a couple of mm thick. The size of the circle can vary but aim for about approximately 20 cm in diameter. As you can see from my photos my circle is very rough around the edges but it doesn’t matter.
- Heat a flat griddle or frying pan until quite hot and brush some oil on and off to stop the tortillas from sticking.
- Cook each side of the tortilla for approximately 1 minute.
- Keep warm until you are ready to fill if using straight away or leave to cool if using as a wrap for packed lunches.
- Any unused tortillas can be frozen, wrapped individually in cling film. Defrost before use.
- Enjoy!

I am totally making those! I make the flatbread pizza all the time cos it’s so easy. In fact, might try them for the little one’s dinner today. I love things that can be made from ‘cupboard’ ingredients.
