Its that time of year that the Christmas fairs begin and with children at various schools that can be a lot that I am obligated to go to. I have to admit that I love school fairs and local village fairs because of the beautiful hand made wares that can usually be found at them. I am a sucker for anything different or not available on the high street. Today’s little village school Christmas fair was no exception. I am always amazed at the effort put in by parents at a school with just over 100 pupils, I love it!
Anyway, there isn’t much I can offer in the way of help at the moment except make some cakes so I had the perfect excuse to try out a new idea…marshmallow icing. I had wanted to get very adventurous with this but time ran away as usual so I paired it simply with chocolate cupcakes and decorated with oreo cookies, chocolate and decadent edible glitter! I have so wanted an excuse to use the glitter for ages… Be warned though, whilst I made the most beautiful looking cakes, in my opinion, by the time I’d stepped in dog poo, tipped them over in the car, tripped up dropping one and turned up at the school covered in marshmallow icing they were not quite so pretty…no comment on how I looked either.
What you need
One batch of chocolate cupcakes
Ingredients for the icing
- 120g granulated sugar
- 80g golden syrup
- 1 1/2 tbsp water
- 2 egg whites
- 1/2 tsp vanilla extract
- Whisk the egg whites until forming soft peaks
- Put the sugar, water and golden syrup into a saucepan and cook on a high heat until the sugar dissolves and the mixture thickens, about 2-3 minutes
- Slowly add the sugar mixture to the egg whites whilst whisking
- Whisk the mixture until thick and glossy and add the vanilla extract just before you finish
- Use straight away and pipe the icing onto cooled cupcakes and decorate
Enough to decorate approximately 16 cupcakes
This icing makes a pleasnt change to buttercream, fluffy and light and not at all sickly, perfect if you have a sweet tooth. I will definitely be using this again.

I’ve had plenty of fun experiences transporting cupcakes to school events! I have now resorted to buying cupcake boxes online. They are brilliant as they have ready-made holes in the bottom for the cupcakes to sit. It’s saved me a lot of heartache! I love this marshmallow icing too. It is so much less sickly then buttercreamn. Love all the pretty decorations on yours.

They look fab! I just made a choc marshmallow cake for a cake club. I tried a similar topping to this but couldn’t get it to work.. 🙁 Will try again using your recipe 🙂 x
