In honour of National Baking week 17-23 October I’ve dusted off the tins, stocked up with flour and got baking.
This is easy peasy and perfect for those unexpected guests or if you need something now. I know it isn’t the prettiest cake but remember it’s cooked in the microwave. It would work well with fresh fruit such as apple or could throw a handful of frozen red fruits into the bottom of the dish.
2 eggs
1 cup sugar
1 cup milk
1 cup oil
4 tbsp golden syrup
1 ½ cups SR flour ( I used gluten free self raising flour)
1 tsp baking powder
1 tin of pears in juice, drained ie Princes
1. Grease and line a suitable microwave container. Make sure it’s big enough because this cake will rise very well.
2. Place all the ingredients into a large bowl and mix until smooth with an electric whisk
3. Place the pears cut side up into the bottom of the container
4. Pour the cake mixture onto the pears and wobble slightly ensuring that the mixture seeps into all the nooks.
5. Cook for approximately 12 minutes in the microwave but this will depend on the strength of your microwave. You can use a skewer to test the cake but remember it will go on cooking after it is removed from the microwave.
6. Leave to cool for 5 minutes before turning out on a plate.
7. This can either be eaten warm with custard, cream or ice cream or drizzled with icing when cold.

I really like the look of this and have saved it, but I’m just wondering if there is any way of having a print option on recipes for old-fashioned people like me who want to easily print it out 🙂
I will look into it, saw it on someone’s blog recently and I like printing off recipes too.
I think even I could make that! Looks simple enough to make it wheat *and* dairy free for my delicate tummy and still be yummy 🙂

My mum in law used to cook this & I’ve been looking for the recipe for ages because I was unsure of the measurements. I will definitely keep this for those unexpected guests or for occasions when I need something sweet and there is no chocolate at hand-its a quick fix

I have never cooked a cake in the microwave but tempted to try this one. Especially as it looks yummy gluten free too 🙂 Dumb question could you use silcone baking things or best to use glass? 🙂
I used glass but I’m pretty sure I read that silicone is better to use. I”m not 100% sure though so check before. Let me know how it goes. It does rise quite a bit do make sure container is big enough. Next time I’d probably do it in a wider shallower ceramic dish.
