I was excited to be given a bag full of ingredients from Capricorn Goats Cheese at the Tech n Taste conference I went to a couple of weeks ago. Attached was a recipe which I have more or less stuck to with the addition of pomegranate seeds. The recipe was a huge hit with the children and would make a perfect starter or lunch with some crusty wedges of toast added.

Ingredients

  • 2 x 100g Capricorn Goats Cheese
  • 25g flour ( I used gluten free so my son could eat it)
  • 100g watercress
  • 25g pesto
  • Rapeseed oil
  • Sea salt
  • Black Pepper
  • Pomegranate seeds, approx 50g

  1. Cut each goats cheese into 4 pieces
  2. Coat the goats cheese with seasoned flour
  3. Heat a dash of rapeseed oil in a frying pan
  4. Fry the floured cheese until both sides are golden
  5. Remove the cheese from the frying pan and place on kitchen paper to drain excess oil
  6. Put the watercress onto a plate and place the goats cheese on top.
  7. Scatter over the pomegranate seeds and then spoon the pesto over

Feeds four children as a starter, add some thick slices of toast for a light lunch

As you can see below it didn’t last long.
