It’s that lovely time of year again when the apples, pears, plums and blackberries are ready to be picked so I took some time out from packing boxes to gather the harvest and make a cake. An upside down plum and almond one to be precise! It takes all of 10 minutes preparation and then approximately 40 minutes in the oven.

You will need the following although this serves a generous eight portions.

  • 9 large ripe plums, halved and stoned
  • 125g self raising flour. I used gluten free flour
  • 125g soft butter or better still keep a tub of Stork in the fridge ready for last minute bakes.
  • 125g soft brown sugar or caster sugar
  • 50g ground almonds
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 scant teaspoon almond extract/essence
  • 2 tablespoons milk

  1. Prepare a 22cm cake tin by greasing and lining with greaseproof paper and preheat the oven to 180˙C
  2. Place the halved plums cut side up into the cake tin
  3. Put all the other ingredients except the milk into a food processor and process until well mixed and smooth.
  4. Add milk and mix slowly until a dropping consistency
  5. Cover the plums with the cake mixture
  6. Cook in the oven for approximately 40 minutes until a skewer comes out clean when used to test the middle
  7. Leave in the tin for five minutes then using a plate turn the cake out onto it
  8. Serve warm with ice cream, cream or custard

    Soooooooooo delicious!!! Very easy to make and it just tastes so divine! So light and yummy!
    Not a crumb left! Reluctantly shared it with my friend…
