Yet another recipe for using up plums, I have never made chutney before and I cannot vouch for the taste when it is ready but I did have a little try when I cooked it and the initial taste test was good. 😀
Ingredients
- 1 bulb garlic
- 1 inch of fresh root ginger
- 2 large onions
- 1 kg cooking apples
- 3 star anise
- 1 tsp cumin seeds
- 1 cinnamon stick
- 500ml cider vinegar
- 1 tbsp salt
- 1 kg plums
- 450g caster sugar
Plus sterilised jars
- Peel and thinly slice the onions, garlic and ginger and put into a large wide saucepan. Peel, chop and core the apples and add to the pan. Then add the vinegar and salt.
- Bring the mixture to the boil slowly, stir, cover with a lid and turn down the heat. Simmer for 30 minutes.
- After 30 minutes add the stoned and quartered plums along with the sugar to the pan. Stir and then allow to bubble away for at least 4o minutes stirring frequently, it can take a lot longer than this.
- Pour into jars, remove the star anise and cinnamon if you want to, then seal. Leave the chutney in a cool dark place for at least a month to allow the flavours to develop.
Notes
- Use less vinegar if you prefer a thicker chutney
- This can take a while to thicken up, make sure you use apples that aren’t over ripe or add the juice of a lemon and just use less vinegar.
