Ingredients
- 100g unsalted butter
- 125g caster sugar
- 2 large eggs
- 3 large very very ripe bananas
- 200g self-raising flour
- 100g bar dark chocolate with ginger, chopped into small pieces.
- 1/2 teaspoon ground ginger or to taste
- 40 g dark chocolate to decorate
- Preheat oven to 160ºC/Gas mark 3 and line a loaf tin with baking parchment or as I use a liner from Lakeland.
- Cream the butter and sugar until smooth. Add one of the eggs and beat until mixed, add the other one. Then add the chopped chocolate and the ground ginger.
- Mash the bananas well and add to the bowl.
- Sift the flour into the bowl and fold into the mixture.
- Pour mixture into tin and cook for an hour. Check it is cooked by inserting a fine knife or other metal object into the middle & seeing if it comes out clean. I find it can sometimes take a bit longer than an hour.
- Remove from oven and leave to cool.
- Melt the remaining chocolate and use to decorate the cake.
- Eat….and enjoy!

That looks wonderful! Am off to Google to figure out how to convert the recipe (grams to tsps/cups. And just what is caster sugar? Granulated??). Man-Child would LOVE this!
