Ingredients

  • 100g unsalted butter
  • 125g caster sugar
  • 2 large eggs
  • 3 large very very ripe bananas
  • 200g self-raising flour
  • 100g bar dark chocolate with ginger, chopped into small pieces.
  • 1/2 teaspoon ground ginger or to taste
  • 40 g dark chocolate to decorate
  1. Preheat oven to 160ºC/Gas mark 3 and line a loaf tin with baking parchment or as I use a liner from Lakeland.
  2. Cream the butter and sugar until smooth. Add one of the eggs and beat until mixed, add the other one. Then add the chopped chocolate and the ground ginger.
  3. Mash the bananas well and add to the bowl.
  4. Sift the flour into the bowl and fold into the mixture.
  5. Pour mixture into tin and cook for an hour. Check it is cooked by inserting a fine knife or other metal object into the middle & seeing if it comes out clean. I find it can sometimes take a bit longer than an hour.
  6. Remove from oven and leave to cool.
  7. Melt the remaining chocolate and use to decorate the cake.
  8. Eat….and enjoy!
