If you have a childrens party planned then these biscuits are a must. My fifteen year old son asks me to make these all the time birthdays or not and they disappear quickly even though the recipe makes lots. Little I wanted to take these biscuits into school on her birthday to share with her class mates so that is what Little I got. We won’t mention that mummy stayed up until 2am decorating them….
It’s that Nigella Lawson book again “How To Be A Domestic Goddess” remember from the Little cake people ? This recipe is so easy and if you don’t want as many biscuits as the recipe makes, then halve the dough and freeze it. Then you have instant cookie dough for next time.
Butter Biscuits recipe…

Serves: 50-60

- 400g plain flour
- 175g soft unsalted butter
- 1 teaspoon baking powder
- 200g caster sugar
- 1 teaspoon salt ( I use less than this)
- 2 large eggs
- 1 teaspoon vanilla extract
- 300g icing sugar and food colouring
- Preheat the oven to 180ºC/ gas mark 4
- Cream the butter & sugar until pale and mousse like
- Beat in the eggs & vanilla
- In a separate bowl combine the flour,baking powder & salt
- Add dry ingredients to the butter & eggs, mix gently.
- If the mixture is too sticky then add more flour sparingly.
- Halve the dough,make into fat discs,wrap each half into clingfilm and rest in fridge for at least 1 hour.
- Remove one disc and place onto a floured surface.Roll out to a thickness of ½cm. Cut with the cookie cutters & place onto greased or lined baking sheet leaving a small space between each one.
- Bake the cookies for 8-12 minutes until light golden around the edges
- Cool on a rack
- For the icing mix hot water with the icing sugar, very slowly, mix to form a thick paste. Colour as desired
- Decorate the biscuits with the icing. I then used ready prepared writing icing to decorate the butterflies in more detail
I got some fab Easter cutters from Lakeland ( again) and couldn’t resist the butterfly and bunny shapes.
I have done lots of different shapes with this recipe including the number of the child’s birthday as per Nigella. These biscuits really do taste great!
