I have to say that’s progress because when my best friend and I were student nurses we lived on pasta and tinned tomatoes! With this is mind I thought this Warm Goats Cheese and Pancetta salad with an accompaniment of fresh Walnut Soda Bread would make a great low budget speedy supper for busy professionals and families.
Goats Cheese and Pancetta Salad with Walnut Soda Bread

Serves: 40 mins

- 200g plain white flour
- 200g wholemeal flour
- 300ml buttermilk
- 1tsp bicarbonate of soda
- 1tsp salt
- 100g chopped walnuts
- 200g goats cheese
- 100g Pancetta
- 200g peashoots/watercress/green salad
- Jar of grilled/roasted peppers, drained and chopped
- 2tbsp flour
- Olive oil
- 4tbsp olive oil
- 2tbsp cider vinegar
- 1tbsp green pesto
- 3tsp Dijon mustard
- Preheat the oven to 200 ºC
- Make the bread:
- In a bowl mix the white and wholemeal flours together with the bicarbonate of soda and salt
- Make a well in the mixture and add the buttermilk
- Mix well and then add the walnuts
- Shape the dough into a round loaf and slash deep crosses into the dough. Sprinkle with flour
- Bake in the oven for 30 minutes.
- Prepare the dressing:
- In a jug mix the olive oil, cider vinegar, pesto and Dijon mustard well
- Cut the goats cheese into eight rounds
- Coat the cheese lightly in flour
- Heat a little olive oil in a frying pan
- Gently brown the goats cheese for a couple of minutes and then remove from the pan, keep warm
- Add the pancetta to the pan and fry for a few minutes
- In the meantime divide the salad and peppers between the plates
- Add the goats cheese to the salad, then sprinkle the pancetta over
- Drizzle the dressing over and serve with a wedge of walnut soda bread.

So, with nurses in mind I have created this Warm Goats Cheese and Pancetta Salad recipe that is tasty, nutritious and speedy to make after a long shift.

I cook something very similar but I put a little honey on the goats cheese just before I finish grilling it – yummy!
