Warm Goats Cheese & Pancetta Salad with Walnut Soda Bread

Ingredients
  • 200g plain white flour
  • 200g wholemeal flour
  • 300ml buttermilk
  • 1tsp bicarbonate of soda
  • 1tsp salt
  • 100g chopped walnuts
  • 200g goats cheese
  • 100g Pancetta
  • 200g peashoots/watercress/green salad
  • Jar of grilled/roasted peppers, drained and chopped
  • 2tbsp flour
  • Olive oil
  • 4tbsp olive oil
  • 2tbsp cider vinegar
  • 1tbsp green pesto
  • 3tsp Dijon mustard
Instructions
  1. Preheat the oven to 200 ÂșC
  2. Make the bread:
  3. In a bowl mix the white and wholemeal flours together with the bicarbonate of soda and salt
  4. Make a well in the mixture and add the buttermilk
  5. Mix well and then add the walnuts
  6. Shape the dough into a round loaf and slash deep crosses into the dough. Sprinkle with flour
  7. Bake in the oven for 30 minutes.
  8. Prepare the dressing:
  9. In a jug mix the olive oil, cider vinegar, pesto and Dijon mustard well
  10. Cut the goats cheese into eight rounds
  11. Coat the cheese lightly in flour
  12. Heat a little olive oil in a frying pan
  13. Gently brown the goats cheese for a couple of minutes and then remove from the pan, keep warm
  14. Add the pancetta to the pan and fry for a few minutes
  15. In the meantime divide the salad and peppers between the plates
  16. Add the goats cheese to the salad, then sprinkle the pancetta over
  17. Drizzle the dressing over and serve with a wedge of walnut soda bread.
