Just sometimes, not very often though, I find myself home alone. And it’s times like that I find myself wanting to indulge in a little comfort food. The dilemma is do I go and buy or make a whole dessert that is supposed to feed a family and then have the rest of it staring at me willing it to eat even more or is there something that I can make that is quick and won’t leave any tempting leftovers. There is now. I played around and came up with this cheesecake recipe for one! Of course if you want to make it for more people adjust the quantities of the ingredients. I made this using a stainless steel cooking ring. I had to make do with store cupboard essentials and I didn’t have any other cream cheese so I went even more decadent and used a Délice des Crémiers cheese which was perfect because it is slightly tangy and not sweet but very very creamy. It was the ideal combination with a glass of Prosecco. Thanks to The Dairy Girl for the cheese.
- 60g of cream cheese (I used a heavenly tangy cream cheese called Delicé des Cremiers via The Dairy Girl)
- 15g butter melted
- 3 biscuits crushed (I used chocolate hobnobs)
- 2 tbsp icing sugar
- ½ tsp vanilla paste preferably but extract is fine
- 2 tbsp double cream
- Mix the crushed biscuits and butter well. Put the metal ring in the middle of a serving plate and carefully push the coated biscuit crumbs into the bottom of the ring.
- Put the plate in the freezer to chill.
- Whisk the cream cheese and icing with an electric whisk.
- Add the cream and vanilla extract to the mixture and whisk again until holding soft peaks.
- Top the biscuit base with the creamy mixture and freeze for 30 minutes.
- Place the cheesecake in the fridge until ready to eat.
- Carefully remove the metal ring.
- Top with fruit if required and dust with icing sugar. Preferably with a sieve so you don’t end up with lumps! But hey, who cares, it’s just for you!
