I don’t know about you but I still have Christmas decorations lurking about so to think that Pancake day is just 20 days away seems absurd, but it really is only 20 days until 12th February. The day when mums and dads around the nation don their aprons and get tossing. I dread to think how many pancakes I have made in the past. It is a lot. Last year, because I wasn’t home, I did the unheard of and bought some ready made ones. I have to admit they worked out a lot less cheaper and were a lot less hassle than making them from scratch. They certainly have their place when you are short of time.
I was sent some Abra-ca-Debora pancakes to try out…we made savory wraps with the traditional dutch pancakes by filling them with grated cheese and ham, and chocolate filled pancakes with the sweet dutch pancakes. I however sneaked one away and filled it with golden syrup which is my preferred choice of filling ( even better topped with clotted cream, but I’m being ‘good’ at the moment “cough” 😉 ) The great thing with pancakes is that they are just so versatile you can fill them with just about anything! My favourite topping is the good ol’ fashioned lemon juice and a sprinkling of granulated sugar. Ohhh yum!
Blueberry , strawberries and ice cream with a little splash of cointreau ( interesting as i dont normally like anything alcoholic ) ..but just a dash is amazing

Nom, nom, love pancakes.
For me it has to be plain lemon and sugar. However, if I was really treating myself, I’d go Little Chef Jubilee pancake style with cherry filling and ice cream.
J’s fave filling for his gluten free pancakes is MAPLE SYRUP… although it’s more of a lake made of syrup than just a filling that makes his day!

Simple: Lemon, butter & sugar (maybe the odd strawberry!)

Yogurt – maple yogurt if it can be found! – you all have to try this! You will denying yourself a moment of paradise!!
