A reminder that the Christmas baking carnival is on Monday 6th December so there is still time to post those festive recipes and send me the link. These Christmas tree cookies are so simple but absolutely gorgeous…..

Ingredients

  • 150g caster sugar
  • 150g soft unsalted butter
  • 1 small egg beaten
  • 1/2 teaspoon vanilla essence
  • 300g plain flour
  • pinch of salt
  1. Preheat oven to 180ºC ( 350F), gas mark 4
  2. Cream the butter and sugar until light and fluffy.
  3. Add the egg, vanilla and salt and mix well
  4. Slowly add the flour and mix into a dough
  5. Divide the dough into two rounds and wrap in cling film. Chill for at least an hour
  6. Roll out the dough on a lightly floured surface to a thickness of 3-4mm.
  7. Using cutters cut out the cookies and put onto baking trays. Use a tiny cutter to allow the ribbon through for hanging
  8. Bake for about 11/12 minutes until just firm and golden
  9. Cool on tray for 10 minutes then place onto a wire rack to cool completely
  10. Decorate to your hearts content with either icing you make or ready made writing tubes of icing
  11. When the icing is set and dry decorate the cookies with colored ribbon
