Apple Cupcakes

Have I said before how much I like cake? Oh…I have ?

I try to use up as much fruit as possible from the garden so I made a traditional fairy cake, or cupcake, with the addition of chopped apple thus a very yummy and moist Apple Cupcake!!

Serves: 12

Ingredients
  • 125g softened unsalted butter
  • 125g caster sugar
  • 125g self raising flour
  • 2 eggs
  • Β½ teaspoon vanilla extract
  • 2-3 tablespoons milk
  • Approximately 2 dessert apples chopped
  • Optional: Fondant icing to decorate and a drop of green food colouring
Instructions
  1. Preheat oven to 200ΒΊC/gas mark 6
  2. Put all the ingredients except for the milk into a food processor and blitz until smooth. Add the milk down the funnel whilst pulsing to make a soft dropping consistency.
  3. Easy Peasy!!
  4. If doing in the traditional way, cream the butter and sugar, add the vanilla and then the eggs one at a time adding a spoonful of flour each time. Fold in the remainder of the flour, then add the milk.
  5. Put a generous teaspoon of the mixture into the bottom of a muffin case.
  6. Put a teaspoon of the apple onto the cake mixture
  7. Add another dollop of mixture on top of the apple.
  8. Bake for 15-20 minutes until cooked and golden.
  9. Cool for 5 minutes and then remove the cakes from the tin and leave to cool completely.
  10. Prepare your fondant icing, if using, and use to decorate your cakes.

  4. They look scrummy!! I love the way the icing is level with the top of the case too!

    As an aside… I *knew* I’d seen those pop-up social buttons somewhere – it was here!! I’ve been looking for the code for those all week – tweeted about it, asked on forums, refused to speak to Derren Brown when I saw his.
    I’ve done it on mine now (googled for help) and I love them πŸ˜€
