My eleven year old daughter’s class is fund-raising at the moment for a summer trip to Wales. This is to enable them to have treats everyday such as sweets and ice-creams. A few weeks ago they had a cake sale and the latest venture was a Welsh cafe. They made many loaves of Bara Brith in school which is a Welsh tea bread. A recipe for it can be found here at the ‘All Recipes UK’ website.
They also wanted to sell Welsh cakes,I have never made them before but my mummy is an expert having inherited the recipe from her Welsh mother. So, I borrowed the recipe and had my first attempt at making them. 
Ingredients
- 450g self -raising flour
- 110g margarine
- 110g lard I used 220g of margarine as I didn’t have any lard
- 110g caster sugar
- 2 eggs
- 170g sultanas or currants
- pinch of salt
- 1/2 teaspoon of baking powder
- water to mix
- Sift the flour,baking powder and salt into a bowl.
- Add the fat and rub mixture together until it resembles fine breadcrumbs.
- Add the sugar and dried fruit and mix.
- Beat the eggs and add to the mixture.
- Add water to form a dough like mixture. Be very careful not to add too much which makes it too wet.
- Roll the dough out to about 5mm thick, be careful not to do the cakes too deep as they won’t cook in the middle as quickly as the outsides. You’ll end up with the inside still raw otherwise.
- Cut the dough with cutters to form the cakes. Warning- do not leave a toddler with the dough and the cutter or you are liable to end up with ‘pretty’ patterns on the dough!
- Cook cakes on a greased bakestone/griddle on a low heat until golden brown, turn over and repeat.
- Allow cakes to cool and sprinkle with caster sugar.
Makes about 40 cakes

The children made nearly £300 from their welsh cafe, amazing considering it is a tiny school. It seemed as though everyone, pupils and patrons had a lovely time.
