Sift Fold in the flour, bicarbonate of soda and salt
Gently mix in the chocolate chips and pistachios
The dough can be quite sticky so use floured hands to roll the dough into a sausage
Cut the dough into 2 cm slices and place cut side down onto a parchment lined baking tray leaving a large space between each one, as they can spread quite a bit.
Bake for 8-10 minutes
Allow to cool on the baking sheet for at least 5 minutes before carefully moving onto a wire rack
Notes
You will be able to make about 16 large cookies with this recipe but if you prefer smaller ones then bake for slightly less time. When they are a little golden around the edges that's when they are done.
If you prefer your cookies with a bit more crunch as opposed to soft and chewy, then bake them for an extra two minutes.
