Cuisine: British
Serves: 8
- 140g self raising flour
- 140g caster sugar
- 140g soft butter (or stork)
- 2 eggs
- 2 very ripe bananas mashed
- 50g chopped hazelnuts (I blitzed whole ones in a blender to keep them quite chunky)
- 50g dark chocolate chips
- 1 tsp vanilla extract
- 1tsp baking powder
- Icing sugar to finish (optional)
- Preheat the oven to 180ÂșC/ gas mark 4
- Grease and line a 2lb loaf tin
- Cream the butter and sugar until smooth and creamy
- Add the eggs to the mixture with a little flour and beat in
- Fold in the flour and baking powder
- Mix the banana, hazelnuts, chocolate chips and vanilla extract together and gently add to the mixture and combine well
- Put the mixture into the loaf tin and bake for 45-60 minutes
- Banana bread can be very slow to cook so use a skewer to check if it is cooked through
- Cool on a wire rack and sprinkle with some icing sugar
- Eat for breakfast, lunch or tea...or just because...
