Ingredients
  • 175g soft unsalted butter
  • 115g caster sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 175g self raising flour
  • 40g cornflour
  • 50g rolled oats
  • 50g dessicated coconut
  • Glace cherries halved or quartered depending on how much you like them.
Instructions
  1. Preheat the oven to 190ÂșC/gas mark 5
  2. Grease and line two baking sheets
  3. Beat the butter and sugar until light and creamy
  4. Beat in the egg and vanilla
  5. Sift the flour and cornflour into the bowl and stir to mix
  6. Shape the mixture into 24 balls (I found using my hands was the easiest way) and roll half in the oats and half in the coconut
  7. Place 12 balls on each baking sheet
  8. Press the balls slightly and top each one with the glace cherry
  9. Bake for 15-20 minutes
  10. Cool for 5 minutes before transferring the biscuits to a wire rack
Notes
These spread and grow a lot so leave plenty of space between them on the baking sheets. Also they appear very small before cooked so beware of the size you make them otherwise you may end up with some gigantic biscuits like me.
