The sweet aromatic flavour of Spanish raspberries mixed with the clean refreshing taste of vodka finished off with a cheeky fizz. Cool off and watch the sun go down with this gorgeous crimson cocktail.

Ingredients
  • 100ml sugar syrup
  • 160ml vodka
  • 250ml water
  • 100g raspberries
  • To serve
  • 75ml Cava or Prosecco per cocktail
  • Fresh raspberries to serve
Instructions
  1. Put the sugar syrup, vodka, water and raspberries into a blender and blend well
  2. Pour into a freezer proof container and freeze overnight
  3. To serve: add a generous scoop of the frozen cocktail to a cocktail glass
  4. Top the glass with 75ml of fizzy wine, prosecco or cava
  5. Decorate with fresh raspberries and enjoy
