You can't beat a posh fish finger sandwich but this is made using chunky white fish with the gentle taste of lemon in a light breadcrumb finish served with a rocket & caper mayo. Serve with chunky chips and mushy peas. This will feed 4 VERY hungry people but will easily feed up to six.

Ingredients
600g white fish, make sure it is firm and thick. I used smoked haddock.
100-120g breadcrumbs (whizz up your favourite bread in a food processor or blender- I used a seeded gluten free loaf)
Zest of 1 lemon
Black pepper
60g plain flour (again I used gluten free)
Salt
2 eggs
120ml mayonnaise
Handful of rocket roughly chopped
1 tbsp capers, drained
8 slices of bread to serve
Instructions
Preheat the oven to 200ÂșC/ gas mark 6
Line a baking tray
Put the breadcrumbs into a shallow bowl and add the lemon zest and black pepper and mix.
Put the flour in another shallow bowl and season
Put the eggs in a shallow bowl and beat
Cut the fish length ways to make chunky fingers
Dip a piece of fish into the flour, then the egg (shake off the excess) and then roll in the breadcrumbs.
Place on the baking tray.
Repeat until all the fish is coated
Bake in the oven for 10 minutes
Whilst the fish is cooking put the mayonnaise into a bowl, add the rocket and capers and mix
If serving with mushy peas cook frozen peas for five minutes, drain and mash with a little double cream or creme fraiche and add salt and pepper to taste.
Once the fish is cooked, layer the fish fingers, mayo and mushy peas on top of a slice of bread, top with another slice of bread and tuck in!
