I love love finger food, and I have a real soft spot for kebabs, or skewers. These sticky chilli lime chicken skewers are perfect for the buffet season and as well as being super tasty and easy to make, they are also free from all 14 of the top food allergens.
I am collaborating with some awesome bloggers to show that a free from Christmas buffet doesn’t have to mean boring…yes making sure each recipe doesn’t contain one the 14 top food allergens can be daunting, however it doesn’t need to be. Over two weeks we will each be ‘adding’ to the buffet table…

- cereals containing gluten: wheat, rye, barley, oats (if not gluten-free),

The chilli lime chicken skewers can be prepared ahead and then cooked just before serving or they taste just as delicious served cold. Ideally it would make the perfect match if served with a garlic and lime aioli, believe it or not this can be made without egg.
Whilst you will want to marinate the chicken for half an hour to an hour or so, don’t leave overnight as the lime juice can make the meat tough. An hour is more than enough to allow all the fantastic fresh, zesty and hot flavours to penetrate the chicken.
Super Sticky and Fabulous Chilli Lime Chicken Skewers Recipe…

Serves: 10
- 4 chicken breasts cubed
- 2 limes- juice and zest
- 2 garlic cloves chopped very finely and crushed into a pulp or paste
- 1 tbsp fresh red chilli finely chopped
- 1 tbsp oil
- Handful fresh coriander chopped
- Salt & pepper to taste
- Mix all the ingredients together in a large bowl
- Leave to marinate in the fridge for approximately ½- 1 hour
- Heat the oven to 220ºC/gas mark 7
- Remove the chicken from the fridge and thread the chicken on to small skewers
- Heat a large frying pan
- Place the skewers in the hot pan and turn frequently browning all sides for a couple of minutes coating with any excess marinade as you go
- Place the pan (or transfer to an oven safe dish) in the oven and cook the chicken for 8-10 minutes until cooked through
- Serve hot or they can be eaten cold

Your little chicken skewers are right up my street! Garlic and citrus together are my idea of heaven on a plate. I don’t know what it is with mini skewers, but I always get drawn to them when we’re having finger food. xx #FreeFromChristmas
