  • 350g self raising flour
  • 125g butter
  • 175g caster sugar
  • 1 egg
  • 1 tsp ground nutmeg
  • 2 tsp vanilla extract
  • 3 tbsp golden syrup
  1. In a food processor mix the flour, nutmeg and butter and process until the mixture resembles fine breadcrumbs
  2. Add the sugar and give a good blitz to mix
  3. Add the egg, vanilla extract and golden syrup and mix until the mixture starts becoming a ball of dough
  4. Remove the dough from the processor, bring together into a ball of dough and wrap in cling film
  5. Chill the dough for at least 30 minutes in the fridge
  6. Preheat the oven to 180ºC/ Gas mark 4
  7. Tip the dough out onto a floured surface (I do this in small batches so say a third of the dough at a time, putting the rest of the dough back into the fridge until ready to use)
  8. Roll the dough out to a thickness of between 5 and 7 mm depending on how crunchy you want your Christmas biscuits to be
  9. Use cookie cutters to cut into the shapes you require
  10. If you want to hang the biscuits with ribbon use either a special tiny cutter to cut out the shape or the end of a teaspoon to make a hole, remember to make it big enough allowing for spread
  11. Bake the biscuits on parchment lined baking trays for 8-10 mins
  12. Remove from the oven and cool the biscuits on a wire rack
  13. *If the holes have become too small during the baking process push the end of a spoon through gently again to open them up before the biscuits harden completely
  14. Optional: Decorate with royal or glacé icing and decorations such as glitter, metallic edible balls and sprinkles.
