Elderflower Cordial

A very easy recipe for homemade Elderflower cordial, the perfect excuse to get foraging!
Serves: 1 litre
  • 10 large elderflower heads (in full bloom, scented & avoid brown edging) rinsed gently
  • 800g granulated sugar
  • 25g tartaric acid
  • 1 sliced lemon
  • 1 litre cooled boiled water
  1. Mix together the water, sugar, tartaric acid and lemon in a large bowl
  2. Submerge the elderflower heads into the liquid and leave for 24 hours stirring every so often to help the sugar dissolve
  3. Strain the liquid into a 1 litre bottle
  4. Drink immediately with still or sparkling water (or even better champagne or prosecco)
  5. Store in a cool, dark place for a few days
