Gluten, dairy, refined sugar free coconut pancakes and paleo friendly
Serves: 10
  • 4 tbsp coconut flour
  • 4 large eggs
  • 180ml coconut milk
  • ½ tsp vanilla extract
  • pinch of salt
  • add a little water if the mixture is too thick
  • 2 tbsp dessicated coconut (use organic as it doesn't contain any additives or oil)
  1. Mix all the ingredients well in a large bowl
  2. Heat a frying pan with a little coconut oil
  3. Quarter fill a ladle with the mixture and pour onto the hot pan
  4. Cook until bubbles start to form on the top of the pancake and it is stable enough to flip over carefully
  5. Keep warm until all pancake mixture is used and then serve with the chocolate sauce and a sprinkling of dessicated coconut
  6. This would also go really well with myblueberry compote recipe
