Chilli Lime Chicken Skewers

Super delicious and sticky these chilli lime kebabs are perfect finger food for parties or just a great meal just because...they are also free from the top 14 food allergens making them a great addition to any 'free from' get together

Serves: 10
  • 4 chicken breasts cubed
  • 2 limes- juice and zest
  • 2 garlic cloves chopped very finely and crushed into a pulp or paste
  • 1 tbsp fresh red chilli finely chopped
  • 1 tbsp oil
  • Handful fresh coriander chopped
  • Salt & pepper to taste
  1. Mix all the ingredients together in a large bowl
  2. Leave to marinate in the fridge for approximately ½- 1 hour
  3. Heat the oven to 220ÂșC/gas mark 7
  4. Remove the chicken from the fridge and thread the chicken on to small skewers
  5. Heat a large frying pan
  6. Place the skewers in the hot pan and turn frequently browning all sides for a couple of minutes coating with any excess marinade as you go
  7. Place the pan (or transfer to an oven safe dish) in the oven and cook the chicken for 8-10 minutes until cooked through
  8. Serve hot or they can be eaten cold
I made 10 mini kebabs, however you could make the chicken cubes a lot smaller and probably nearly double that number
