Chocolate Chip Nutella Cookies

Serves: 16 approx
  • 125g soft butter/margarine
  • 175g caster sugar
  • 1 egg
  • 150g Nutella/ hazelnut spread
  • 225g self raising flour
  • 1 tsp bicarbonate of soda
  • 150g milk chocolate cut into chunks
  1. Preheat the oven to 180ยบ / gas mark 4
  2. Cream the butter and sugar until pale and creamy
  3. Beat in the egg
  4. Beat in the Nutella
  5. Sift in the flour and fold into the mixture with the bicarbonate of soda and salt
  6. Gently mix in the chocolate chunks
  7. Bring together into a dough
  8. Shape the dough with your hands into fat balls and place onto a parchment lined baking tray leaving a large space between each one, as they can spread quite a bit. Do not flatten these as you want them squidgy. If you flatten them you'll end up with gigantic crispy biscuits.
  9. Bake for 8-10 minutes
  10. Leave for 2 minutes to set a little and then carefully move the cookies onto a wire rack to cool
