Apple and Blueberry Spelt Soda Bread

  • 400ml wholemeal spelt bread
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 300ml buttermilk
  • 1 tsp runny honey
  • 1 apple cored and chopped
  • 100g blueberries
  • 1 tbsp chopped fresh thyme or 2 tsp dried thyme (optional)
  1. Preheat the oven to 200ÂșC/ Gas mark 6
  2. Put the flour, bicarbonate of soda and salt into a bowl and mix
  3. Make a well in the flour and add the buttermilk and runny honey, start mixing
  4. Add the fruit and the thyme and mix to bring to a dry dough, it's easier to use your hands at this stage.
  5. Work the dough into a ball and put onto a floured baking tray
  6. Sprinkle some flour on top of the ball and slash a deep cross into the loaf
  7. Bake in the oven, check after 30 mins by tapping the bottom of the bread, if it sounds hollow it should be cooked but if not cook for another 10 mins if necessary.
