These gluten free coconut pancakes are perfect for gluten and dairy free diets and it is also  paleo friendly. Add the thick vegan chocolatey fudge sauce and you’ll be in heaven.

It’s not that long now folks…anyone else find their children asking what seems like, ‘how long until Pancake day mum?’ My children love pancakes and it’s not as though they don’t get them throughout the year, but they know I push the boat out on Pancake day and make thin pancakes – ‘crepes’, which means I’ll be standing at the hob for about two hours (have you ever had to make enough pancakes to feed six pancake monsters before, it takes forever!)

Does anyone else find the kitchen in absolute chaos after making pancakes, I seem to get the mixture everywhere, all over the workHob Pride surfaces, all over the hob, which then sticks fast as it starts cooking on the hob, thank goodness I have some Hob Pride, which is an easy to use hob cleaner, providing deep cleansing and mild abrasive actions to remove tough, burnt on stains from your hob. Phew! From the makers of Oven Pride, the hob cleaner is specifically designed for use on electric, ceramic, halogen and induction hobs.

I thought I’d use a different flour for this month’s ‘FreeFrom’ collaboration; coconut flour. Now, to be honest I had forgotten what a pain it is to work with coconut flour, I had wanted to make coconut crepes but this recipe was having none of that, so instead we have fluffy fat pancakes instead. These coconut pancakes are packed full of protein from the eggs and you can taste the eggs. If you’ve never eaten anything with coconut flour before be prepared for it being very grainy. Coconut flour also mops up all the moisture in liquids so add a little water to the mix if you think it is too thick. Unfortunately these pancakes are far too delicate to demonstrate my fabulous flipping skills….you’ll just have to trust me that they exist *cough*.

They would also taste amazing topped with my blueberry and vanilla compote recipe.


The chocolate sauce which you can find here is well worth making, it’s vegan, refined sugar free and tastes amazing…and don’t panic if it goes grainy, adding more maple syrup (which is what I used) brings it back again. It is soooo good! I also made it without the squares of chocolate.

Coconut Pancakes -refined sugar free, dairy & gluten free #FreeFromPancakes

Gluten, dairy, refined sugar free coconut pancakes and paleo friendly
  • 4 tbsp coconut flour
  • 4 large eggs
  • 180ml coconut milk
  • ½ tsp vanilla extract
  • pinch of salt
  • add a little water if the mixture is too thick
  • 2 tbsp dessicated coconut (use organic as it doesn't contain any additives or oil)
  1. Mix all the ingredients well in a large bowl
  2. Heat a frying pan with a little coconut oil
  3. Quarter fill a ladle with the mixture and pour onto the hot pan
  4. Cook until bubbles start to form on the top of the pancake and it is stable enough to flip over carefully
  5. Keep warm until all pancake mixture is used and then serve with the chocolate sauce and a sprinkling of dessicated coconut
  6. This would also go really well with myblueberry compote recipe
