Do you ever get an itch that you just have to scratch immediately? I get them a lot, and my itches are to bake…bad things! I’m not really a huge biscuit or cookie eater, unless it’s a digestive biscuit or a homemade cookie and I had a sudden urge to make some cookies yesterday. I like giant chewy ones, white chocolate chunk cookies are my absolute favourite but I thought I’d try making Nutella ones, with chocolate chunks of course…
These are ridiculously easy to make, too easy, you’ll probably hate me now because you could well find yourself having to scratch that itch far too often as well! Never mind, we can grow bigger together, only joking…everything in moderation! Yes? Make 16 cookies, eat a couple, take the rest to work or make your neighbour’s day by presenting them with some warm homemade Nutella chocolate chunk cookies. Who am I kidding?
Nutella Chocolate Chunk Cookies recipe…

Serves: 16 approx

- 125g soft butter/margarine
- 175g caster sugar
- 1 egg
- 150g Nutella/ hazelnut spread
- 225g self raising flour
- 1 tsp bicarbonate of soda
- 150g milk chocolate cut into chunks
- Preheat the oven to 180º / gas mark 4
- Cream the butter and sugar until pale and creamy
- Beat in the egg
- Beat in the Nutella
- Sift in the flour and fold into the mixture with the bicarbonate of soda and salt
- Gently mix in the chocolate chunks
- Bring together into a dough
- Shape the dough with your hands into fat balls and place onto a parchment lined baking tray leaving a large space between each one, as they can spread quite a bit. Do not flatten these as you want them squidgy. If you flatten them you'll end up with gigantic crispy biscuits.
- Bake for 8-10 minutes
- Leave for 2 minutes to set a little and then carefully move the cookies onto a wire rack to cool
