These make perfect last minute presents, if you can bear to part with them that is. Be warned these are very rich and more-ish.
- 300g icing sugar
- 3 tbsp double cream
- 3 tbsp of rose syrup
- a few drops of pink food colouring
- 200g dark chocolate (use gluten free chocolate for a gluten free treat)
- 1 tsp oil
- In a bowl mix the double cream, rose syrup and food colouring well.
- Sift the icing sugar into the bowl and combine the ingredients until it comes together like dough. Knead into a ball.
- Wrap the ball of mixture in cling film and place in the fridge to chill for at least 30 minutes, this is very important.
- Place the chocolate and oil in a bowl over a gently simmering bowl of water. Make sure the bowl isn’t touching the water.
- Melt the chocolate gently and then remove from the heat and cool for ten minutes.
- Remove the fondant from the fridge and either divide into twenty pieces and roll into balls or roll out the fondant and use cutters to shape to your heart’s desire but you need to be quick because the fondant softens and melts very easily.
- Line a baking tray with parchment paper
- Using two spoons dip and coat the rose creams in chocolate and place on the parchment paper. Add decorations now before the chocolate sets. I used glitter for a festive feel.
- They look lovely placed in a jar and tied with a ribbon to give away as presents. I suggest keeping in the fridge.
- Try not to eat them all before giving away.
