One of the things my son misses most about not being able to eat gluten are special treats such as the lovely chewy cookies you can buy so I decided to try and replicate them. This is a great recipe as long as you don’t make the cookies too enormous otherwise you may have a few breakages…not that it detracts from the lovely treacly taste!


  • 125g soft butter
  • 225g soft brown sugar
  • 1 egg
  • 200g gluten free plain flour
  • 200g white chocolate chopped
  • 1/2 teaspoon gluten free baking powder
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk
  • pinch of salt
  1. Preheat the oven to 180•C, gas mark 4
  2. Cream the butter and sugar until pale and creamy
  3. Beat in the egg, add the milk and vanilla extract
  4. Fold in the flour, baking powder, bicarbonate of soda and salt
  5. Gently fold in the chocolate chunks
  6. The dough will be quite sticky so use floured hands to roll a good handful and place on a lined baking sheet and press down into a round shape about a thickness of 1cm. Leave a large space between each one, at least 10cm as they spread a lot.
  7. Bake for 10 minutes
  8. Allow to cool on the baking sheet for at least 5 minutes before carefully moving onto a wire rack

Makes approximately 10 cookies
