Hands up who wasn’t ill over Christmas? Nearly everyone I have spoken to had at least one poorly member of their family we certainly had our fair share as is fairly typical at this time of year. We have had ear infections, colds, coughs you name it, myself included, and I never get a cold. I blame the odd weather. After the mammoth protein fest that is otherwise known as Christmas I fancied something hot, sweet and very tasty that would also boost our immune systems. Luckily I was prepared with a big butternut squash and sweet potatoes already in the fridge plus lots of bright fresh oranges. Butternut squash is packed full of vitamins, especially vitamin A, minerals and Omega 3 & 6 fatty acids. Onions can help reduce cold symptoms and garlic has anti bacterial and anti fungal properties. Sweet potatoes are rich in potassium and vitamin c.

Ingredients

  • 1kg butternut squash
  • 1 large onion
  • 1 Sweet potato
  • 3 cloves of garlic
  • 1000ml stock or water
  • Juice of 2 oranges
  • Large bunch of coriander chopped
  • Black pepper
  • 2 tbsp olive oil
  1. Peel, de-seed and chop the butternut squash and sweet potato
  2. Chop the onion
  3. Peel and chop the garlic
  4. Heat the olive oil in a large saucepan and gently cook the onion and garlic taking care not to let them brown
  5. Add all the other ingredients and bring to the boil
  6. Simmer for approximately 20 minutes or until the vegetables are soft
  7. Remove from the heat and cool slightly
  8. Process soup until smooth and return to the pan
  9. Heat gently and serve.
  10. Eat with some lovely fresh crusty bread and enjoy

  1. I’m always amazed at the vegetables that contain vitamin C. Everyone thinks citrus but, there’s so many other delicious sources.
