Peach Cupcakes

I had a few hours to myself at the weekend so I curled up with  Martha Stewart’s fabulous Living magazine. There are so many delicious recipes and bits and bobs in it ……but I started with the back page where there are the most delicious looking cupcakes…..and I’m sure by now you must all realise that I love cake!

Warning these are absolutely delicious, moreish and not at all sickly…..you could probably be persuaded to polish off at least two in one sitting!

I couldn’t get nectarines as in the recipe so used peaches instead.

Ingredients

For the Cakes

  • 160g self raising flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 70ml full fat milk
  • 1 teaspoon vanilla extract
  • 85g unsalted butter at room temperature
  • 170g caster sugar
  • 2 large eggs
  • 2 medium peaches,peeled,pitted and chopped finely

For the Topping

  • 240ml double cream
  • 120ml sour cream
  • 3 tablespoons caster sugar
  • 1 peach sliced very finely to decorate
  1. Preheat oven to 180ºC
  2. Sift flour, baking powder and salt together
  3. Stir together the milk and vanilla extract
  4. Beat the butter and sugar until pale and fluffy, then add the eggs one at a time with the mixer running.
  5. Beat in a third of the flour alternating with the milk mixture until all combined.
  6. Line a muffin tin with cases and add one tablespoon of mixture into each case. Add a heaped tablespoon of chopped peach and then top with two tablespoons of mixture.
  7. Bake for about 25 minutes or until the edges are starting to turn golden. Leave to cool.
  8. Whisk the sour cream, cream and sugar to medium peaks. Top the cakes with a generous helping of the cream and decorate with peach slices.
  9. Enjoy….and try not to eat all at once.

Makes 12  extremely lovely cupcakes!

Those look utterly amazing (am thinking you may have a new career in the baking industry – you make everything look so pretty!). When I have a moment – I will somehow figure out how to convert all that to “American” & make them ASAP.

Melt-in-you-mouth yummy looking! I was reading your ingredients and chuckled to myself…I need to check online how to switch from standard to metric measurements :)

I converted the recipe myself so here it is in American measurements:
1 1/4 cups flour
1/3 cup whole milk
6 tablespoons butter
3/4 cup sugar
1 cup heavy cream
1/2 cup sour cream.
All of the other ingredients are the same
:D

I find cream makes me feel ill but these are very moreish…..not very good for my waistline though! ;)
